Baking is a great pastime. It's an easy way to relieve stress and you make delicious treats for everyone in the process. Coca-cola brownies are one of my favorites.

First, preheat the oven to 350 degrees and grease up a 9x13 pan. To make the batter, first mix: 2 cups flour, 2 cups sugar, 1/2tsp salt, 1tsp baking powder, and 1/2tsp cinnamon. Then is a sauscepan over medium high heat, stir up these ingredients until they boil: 1 cup butter, 1/4 cup unsweetened cocoa powder, 1 cup coca-cola (i prefer from glass bottle), and 1/2 cup buttermilk. Now, take that off of heat and add that to the flour mix and whisk until combined. After you whisk, add: 2 eggs, and 1tsp vanilla extract. Mix until combined, put into greased pan, and bake for about 30 minutes. In my oven, it's in there for 30 minutes exactly, and it comes out perfectly each time. Don't over bake!

When the cake in nearly done, (about 24 minutes) make the glaze. First, mix these ingredients in a saucepan until it boils: 1/2 cup butter, 1/4 cup unsweetened cocoa powder, 1/2 cup coca cola. Remove from the heat, and slowly stir in 4 cups of confectioners' sugar until nice and smooth. Then add in about a cup of chopped pecans, and give it a stir.

Once cake is done, take it out of the oven. Use a toothpick and poke a few holes in the cake just to see if it's finished (toothpick should come out clean). Then, pour the warm glaze right over top of the hot cake. Now wait a little bit before you dig in...and enjoy!
