Summary
There are other considerations that should be reviewed before the final decision to begin the business is made. I have listed them in point form below for ease of reference.
* The possibility of running the entire business myself does exist, as the recipe is the key to the success of the business, and making larger batches of sough for the more popular cookies would give me the time necessary to box and sell the cookies to my customers. However, the workload may prove to be too much, considering that I would still need to study, and any demand spikes may require additional hours that I may not be able to deliver.
* If rush hour patterns develop, I would charge a $1.00 extra (11% premium) for these deliveries. I would also limit rush hour purchases to those selections that I have built batter stocks for, and accept specialty orders only if there is a slow period during the time the order is requested. With two oven, we could accept "crash priority" orders at an even higher period ($2.00 premium), for our customers who need their specialty cookies as soon as possible.
* The time for delivery could probably be cut down from 1 hour to 20 minutes, and this would be more appealing to the student community who probably would not want to wait longer than that for their cookies. This would also justify the higher price per dozen than would be available at specialty shops in the area.
* We should consider creating a facebook page and placing an email address for our business to drive awareness within our school community. Taking phone orders may not give us enough information to contact our customers, or confirm in writing what the customer ordered. Emails will provide additional documented proof of order, together with other important customer information that we can use to streamline our operations process.
